Continue reading »]]> Whew, what a week, what a week.

Actually, I don’t remember much of the last week.  That’s kinda sad.  I do remember putting in extra hours at work.  I remember putting together teacher appreciation gifts for the kids’ teachers.  I remember having a very busy, but fun Saturday.  Everything else was kind of a blur.

I had an unfortunate and accidental gluten contamination some time over the weekend, and it KICKED MY TRASH today.  I couldn’t  go in to work; I couldn’t even get from one room to the next without falling over!  I woke up to an intense stomach “attack” and was having a hard time staying awake and coherent, due to the fact that my heart rate and blood pressure dropped like crazy.  Happens every time I have an attack.  Fortunately, the last time I had this happen was a year ago.

Anyway, because of that, I’m not gonna lie.  I’ve not done a thing today, including posting my menu plan.  So…let me share a quick, very last minute run down:

Breakfast Options:
- toast
- bacon
- fruit (usually oranges and apples)
- oatmeal
- scrambled eggs

Lunch Options (the kids can choose a few things on the list, as long as they get at least one veggie and one fruit):
- pb&j sandwiches or tortillas
- cheese quesadillas
- homemade granola bars
- cheese sticks
- baby carrots, red bell peppers
- oranges, apples, applesauce, strawberries, raisins
- ham sandwiches
-yogurt
-Strawberry-Coconut smoothie

Dinner:

Monday – Leftover night
Tuesday – Citrus Herb Chicken, cooked carrots
Wednesday – Munchkin’s night to cook (probably breakfast for dinner)
Thursday – Chile Colorado Burritos, fruit smoothie, green salad
Friday – Pizza
Saturday – Barbecue grilled chicken, baked sweet potato fries
Sunday – Ham, baked potato bar, salad, fruit tray
