I made a lot of food discoveries last year.
2012 was my first full year of living gluten free, and I have been fortunate to discover a lot of options out there. In doing so, I’ve cooked more from scratch and tried more “new” foods in 2012 than I’d ever done before.
Coconut oil was one of my favorite things to try! I’ve enjoyed using it for personal care purposes in addition to cooking, and I love the light coconut taste it lends to so many foods.
I recently received a full quart of coconut oil from Tropical Traditions, and was excited to try it. Oh man, I’m hooked!
The very first thing I did with it was melt it with a little semi-sweet chocolate and drizzle it over air popped popcorn. I was, and still am, SHOCKED at how much more FLAVORFUL this oil is compared to other brands!
Some other things I’ve tried and enjoyed:
- Gluten Free Coconut Fried Fish (I’ve made this with chicken as well)
- Gluten Free Coconut French Toast
- Gluten Free Chicken Fingers
- Coconut Rice Pudding
Of course, there are many other uses for coconut oil…want more info?

There are hundreds of uses for coconut oil!
There are also several very popular recipe videos on Tropical Traditions’ YouTube channel!
Want to try it out?
