I’m not an expert gardener by any means, but luckily for me, zucchini plants provide enough harvest to make even me look half decent at gardening! Every year we get a lot of zucchini, and I love finding new ways to use it up.
I’ve been browsing the web looking for some new great-looking recipes using zucchini, and I wanted to share some of my finds with you! I haven’t tried all of these recipes, but they’re definitely on the “to-try” list. I hope you enjoy!
This recipe, from the Food Network, uses 1 cup of finely grated zucchini along with 1 cup of apple. I have not tried it, but boy, it looks so delicious! It has great reviews too, which is something I always look for.
Beautiful Zucchini Carbonara -
From the mastermind cook Jamie Oliver comes this fantastic recipe/idea for carbonara. It calls for 6 medium zucchini, so it’s gonna make you a nice, big batch of pasta goodness! It looks like a pretty easy recipe as well, which is always a plus!
I found this recipe on Taste of Home’s website. It cooks up and tastes just like an apple crisp, and I absolutely loved it! I had to use a gluten-free flour for the topping, so my “crisp” had a different texture than I’ve had with other crisps. I do think that’s due to the different flour I used, though. It makes a really big batch, so you can freeze any leftovers in squares and have a nice treat on hand!
This recipe from Food.com has a lot of ratings, and a score of 5 stars! You can make it as a loaf of sweet bread, or make some fun cupcakes as pictured.
This recipe, like the others, has fantastic reviews, and I look forward to trying them tonight! It uses 4 small zucchini. Make sure to use SEASONED bread crumbs, as some reviewers thought without the seasoning they were a bit bland. They look fantastic, don’t they?

I am going to have to try that pasta dish!!! I love new recipes for zucchini! Every year I have SO much and love finding new ways to use it!
Zucchini Boats are really yummy too!
