Friday’s Frugal Food – Star Wars dishes

Well, it ain’t so secret that my kids are Star Wars fans.  My daughter, in particular, is obsessed.  So imagine their happy surprise when I came home from the library with these:

Star Wars Cookbooks.  I thought this may be the solution to convince my ever-picky family to eat.

 

I was wrong.

 

I personally enjoyed the food though!  And out of the 4 recipes I tried, the kids did like ONE of them….sure, it was Yoda Soda.  Sure, it had no nutritional value.  Still, my kids TRIED A NEW “FOOD”.

Anywho, here’s what we tried this week from the 1st cookbook:

 

C-3PO Pancakes

5 Tbsp unsalted butter

2 cans (8 ¼ oz each) pineapple rings

1 ¼ cups all-purpose flour

2 tablespoons brown sugar

2 teaspoons baking powder

½ teaspoon salt

2 large eggs

1 cup milk

Melt the butter.  Meanwhile, open the cans of pineapple.  Drain off the juice.  Set aside.  Put the flour, brown sugar, baking powder, and salt in a large bowl.  Stir with a wooden spoon until well mixed.  Break the eggs into a bowl.  Add the milk and 4 tablespoons of the melted butter.  Whisk until well mixed.  Slowly whisk in the flour mixture until well blended.  With a pastry brush, lightly brush some of the remaining butter in a large skillet; heat.  Fill a 1/3 – cup measuring cup with batter.  When the skillet is hot, pour in the batter.  Cook until golden underneath and bubbles burst on the top.  Place one pineapple ring in the center of each pancake.  Using a spatula, carefully flip the pancake.  Cook until golden brown on the second side.

*These were good!

Yoda Soda

3 limes

3 tablespoons sugar

1 cup sparkling water

1 scoop lime sherbet

 

Place one lime on a cutting board and cut in half.  Squeeze juice from each half into a measuring cup.  Repeat with remaining limes until you have ¼ cup juice.  Put the lime juice and sugar in a small pitcher.  Stir with a wooden spoon until the sugar dissolves.  Add the sparkling water and stir until mixed.  Using an ice cream scoop, scoop up the sherbet and drop it into a tall glass.  Pour in the lime water.  Serve immediately.

*To simplify this, we just did sprite and lime sherbet.  Obviously it was a big hit, and Munchkin was speaking in “Yoda voice” the whole dang night. :-)

 

Wookie Cookies

 

2 ¼ cups flour

1 tsp baking soda

1 tsp salt

1 tsp ground cinnamon

1 cup unsalted butter, at room temperature

1 cup packed brown sugar

½ cup sugar

2 large eggs

1 ½ tsp vanilla extract

1 cup milk chocolate chips

1 cup semi-sweet chocolate chips

Preheat oven to 375 degrees F.  Put the flour, baking soda, salt and cinnamon in a mixing bowl.  Stir until well mixed and set aside.  Put the butter, brown sugar, and sugar in another bowl.  Beat together until blended and creamy.  Beat in the eggs and vanilla.  Add the flour mixture and stir until blended.  Stir in the chocolate chips.  Scoop up a rounded tablespoonful of the dough and drop onto a baking sheet.  Be sure to leave about one inch between the cookies as they will spread.  Bake in oven until golden brown, about 10 minutes.

*These were good, but not extra special.  I really loved the cinnamon.  I’d recommend making your favorite chocolate chip cookie recipe and adding cinnamon to that, and calling it good.!

 

We finished the week of Star Wars Food off with some Chicken Alfredo.  I stole a title from the cookbook and told the kids it was Boba Fett-uccine.  +
