Taco Salad
1/2 lb ground beef, cooked and seasoned with taco seasoning
1 head lettuce
1 cup frozen corn, thawed
1 avocado
1 red pepper, sliced into thin strips
2 corn tortillas, sliced into strips
2 tsp olive oil
Salsa
Slice up your lettuce.
Stick the lettuce in a big bowl, and add the corn and peppers. Slice the avocado up and add to the salad.
In a small saucepan, heat the oil. Once heated, add the corn tortilla strips and fry ‘em up. Salt them if you’d like. For a healthier, but more time consuming option, you can bake them in a 375 degree oven for 10 minutes or so, until they’re crispy.
When the tortilla strips are done, it’s time to serve. Top each serving of salad with a small amount of the taco meat, salsa, and the tortilla strips. The salsa works beautifully as a dressing, and keeps the salad moist. Healthy and cheap! Serves 4.
The great thing about this salad is that you can add/omit what you like/don’t like. If you like onion, throw some on! Don’t like avocado? Shred up some carrot instead. If you LOVE cheese and can’t have salad without it, add a little bit of that as well.
COST (When items are bought on sale!!):
ground beef , taco seasoning- $1.10
Corn – $0.24
Red Pepper – $0.99
Corn tortillas and olive oil – $0.23
Lettuce – $1
Salsa – $0.25 (this is even cheaper when you make it yourself!)

My favorite things to do on blogs is read recipes–I find so many that look good and when I make them are just delious– I can’t wait to try this out Im just not much of a cook… Thanks for the help–and sharing this
